Carrot Sambol




Ingredients
·        2 or 3 large carrots.
·        1 chopped green chillies.
·        Sliced onions.
·        Shredded coconut.
·        Lime juice.
·        Salt to taste.

vMethod
·        Peel the Carrots and grate it well (use a carrot grater).Now add all the above ingredients and mix well.

Dhal (Lentil) Curry



IIngredients
·        2 Cups Masoor Dhal.
·        Unroasted curry powder.
·        Turmeric powder.
·        Salt to taste.

 Tempering Ingredients
·        1/2 of an Onion sliced.
·        1 clove garlic finely chopped.
·        1 Sprig curry leaf.
·        Pandan leaf(rampe).
·        2 tspn Mustard seeds.
·        1 tspn Cumin seeds.
·        2 or 3 dried red chillies.

 Method
·      Wash the Dhal well and add sufficient water.Then add unroasted curry powder and turmeric powder and cook well.When the Dhal is done add salt to taste.Now add a little coconut milk and take it out of the stove.
·      For tempering heat a non stick pan and add a little cooking oil and brown the sliced onions.Then add the rest of the Ingredients.Lastly add a little bit of red chillie powder for a nice aroma and taste.Take it out of the stove and add it to the dhal curry and mix well.


Herbal Porridge





   Ingredients
·          1 cup rice.
·          1 cup thick coconut milk.
·          2 cups light coconut milk or water.
·          1 bundle (or 4oz) gotukola leaves or cilantro (coriander) leaves or karapincha (curry leaves).
·          Salt to taste.
·          Jiggery (optional) .

   Method
·        Wash 1 cup rice , add salt and 3 cups of water and boil until rice is cooked and "mushy". Meanwhile, add 2 cups of light coconut milk (or water) with 1 bundle gotukola leaves and crush well in a blender. Now add the gotukola juice to the cooked rice, add 1 cup thick coconut milk and bring to a boil. Adjust salt according to taste. Serve while hot with jaggery (optional).

·        Note: This is a nutritious traditional Sri Lankan dish usually eaten for breakfast.

Milk Rice

   Ingredients
·           2 cups rice.
·           Salt to taste.
·           3-4 cardamoms crushed (optional).
·           1 cup thick coconut milk.

vMethod
·        Wash and drain the rice. Put the rice in the rice cooker and add 3 cups water,
salt and crushed cardamoms.
·        Allow to cook until rice is well boiled. Add the thick coconut milk and stir well.
·        Let it cook until the mixture is one thick mass. There should be no gravy left.
·        Spread the milk rice on a dish.
·        Smoothen the top with a piece of grease-proof paper or plantain leaf.
·        Cut into diamond shaped pieces.

Roast Chicken




   Ingredients
·          Chicken legs and thighs with the skin.
·          Red chillie powder.
·          Salt to taste.
·          Soy sauce.
·          Ketchup.
·          Black pepper powder.
·          1 tspn olive oil.
·          Vinegar.

v  Method
· Wash the chicken well and drain the water. Add red chillie powder, black pepper powder, salt, 1 tbsn ketchup, 1tbsn soy sauce, 1 tspn olive oil or cooking oil, Vinegar and mix well. Poke the chicken with a fork a bit to make holes for the marinade to seep in. Coat well, cover and refrigerate for 4-5 hours or overnight. After marinating place the chicken in a foil tray and rub them with a little margarine and bake them at 400 F about 30 minutes. Remove from oven and turn the other side remove all the fat and juices that's in the tray.Then place the tray back in the oven for 15 minutes or until well cooked and the sides are brown.
